Omega-3 DHA and EPA fortified food products have shown significant growth in recent years. However, the market penetration in key categories such as functional beverages, low-fat and shelf-stable applications is limited because of lack of appropriate delivery systems. Irrespective of the source of omega-3 DHA and EPA, the nature of long chain polyunsaturation make these good fats susceptible to oxidation by light, oxygen and cations. The oxidation is especially pronounced when products undergo thermal processing and are stored at ambient temperatures.
